  3. Place the onions in a dish and season them with sage, salt, and pepper.
  4. In the same skillet, melt 3-4 tbsps of butter and a dash of oil over high heat. Add the liver and cook for 5 minutes, stirring constantly.
  5. Add the onions to the liver, heat everything through, and transfer to a serving plate.
  6. Glaze the pan with the beef stock and white wine. Keep it on the heat until the sauce thickens.
  7. Pour the glaze over the liver and onions and sprinkle with minced parsley for a final touch.
